Vineyard and terroir
The grapes grow in Puglia, on clay-limestone soils close to the sea, conditions that suit ripening. The vines are trained on a double Guyot system, which gives them an even balance of sunlight and ventilation.
Vinification
The grapes are harvested by hand at ideal ripeness and gently pressed. Fermentation is at a low, controlled temperature in stainless steel tanks, which preserves the fresh, pure varietal character.
Ageing
The wine ages on fine lees, which gives a silky texture and a subtle touch of creaminess.
