The grapes grow in the fertile soils of Puglia.
Vinification
The grapes are harvested by hand, so that only the ripest, best bunches are selected. Fermentation and maceration temperatures are controlled to preserve the wine's natural freshness and balance.
Ageing
At the winemaker's discretion, the wine may also be aged in oak barrels, which add depth and structure while keeping the fruit notes intact.

Label / history
Tator is a Poggio Le Volpi project developed in Puglia, reflecting the estate's long-standing affection for the region and its native grape varieties. The brand is dedicated to the Messapian god Tator and to the farmers who still use traditional methods in the vineyards. Tator was the only deity worshipped in ancient times by the people of Messapia, the central land that is now the Salento peninsula.
