Vinification
For the 2024 vintage, bunch thinning was used to balance freshness and sugar levels. Healthy grapes were selectively harvested, destemmed and crushed. The must macerated for six days at 27–28 °C in stainless steel tanks, and malolactic fermentation was completed by December.
Ageing
The wine rested for several months in stainless steel tanks before bottling in spring. This approach retained its purity and freshness.

Dolcetto has been a traditional Piedmontese table wine for centuries. Local farmers served it with everyday meals, unlike the region’s more widely planted Barbera and noble Nebbiolo.
