Vinification
The grapes are carefully selected, harvested by hand into perforated crates, destemmed and crushed. Spontaneous fermentation proceeds without added yeast for approximately one week, accompanied by frequent pump-overs and periodic délestage. The relatively brief skin contact is intended to retain the fruit character while developing an intense colour and gentle, approachable tannins. Malolactic fermentation follows racking.
Ageing
The clarified wine matures for 24 months in cement tanks, followed by approximately 6 months in bottle.
Tasting profile
Ruby red in colour, with aromas of summer fruit including cherry, redcurrant and blackberry. The palate is vinous, soft and rounded, with gentle tannins, pronounced persistence and the lightly bitter finish characteristic of Dolcetto.
