Vineyard and terroir
Palmina comes from organically managed, ICEA-certified vineyards in Gaiole in Chianti. The vines are 10–20 years old, planted at 6,500 vines per hectare between 450 and 500 metres above sea level on limestone and clay. Training combines Guyot and spurred cordon, and the stated yield is 70 q/ha.
Grapes
100% Sangiovese. The grapes are collected around 15–20 days before those intended for Riecine's major red wines to preserve greater acidity. The first vintage was 2014.
Vinification
The 2024 fruit was hand-picked in September, with selection first in the vineyard and again on a vibrating sorting table. The bunches are completely destemmed and the berries go directly to the press without maceration. Pressing is gentle, extracting no more than half of the total volume as must.
The must settles in unlined concrete tanks for 36–48 hours and is then racked away from the heavier sediment into other concrete tanks. Fermentation begins without added yeast at the must's natural temperature; once active, it is cooled to 15°C. The current technical sheet gives an overall fermentation period of approximately 40 days, while the extended account describes 25–30 days of slow fermentation after cooling.
Ageing
The wine spends four months in concrete and stainless-steel tanks, completing tartaric and protein stabilization and spontaneous clarification before bottling. The 2024 vintage was bottled in February 2025.
