Vineyard and terroir
TreSette comes from organically managed, ICEA-certified vineyards in Gaiole in Chianti, Siena. Organic vineyard management has been certified since 2006. The vines grow at 450–500 metres above sea level in limestone-and-clay soils. The 2018 technical sheet records 55-year-old vines, a planting density of 6,000 vines per hectare and a yield of 45 quintals per hectare. Training combines Guyot and spurred cordon.
Grapes
100% Merlot. The first vintage was 2016.
Vinification
The September 2018 harvest was carried out by hand. Fruit underwent two selections, first in the vineyard and then on a vibrating sorting table. The grapes were destemmed but left uncrushed before transfer to truncated-cone Grenier vats made from French oak.
During the first days, plate heat exchangers and dry ice maintained a controlled temperature and encouraged cryomaceration. Extraction was initially limited to two gentle punch-downs per day. Alcoholic fermentation began spontaneously, without inoculated yeast, after which cooling ceased.
On the second day of fermentation, the wine underwent more than 12 hours of délestage, separating as much juice as possible from the skins. The must was then pumped forcefully over the cap to oxygenate the fermenting mass and break up the cap. From the following day onward, the routine consisted of a morning pump-over and an evening punch-down. Once alcoholic fermentation was complete, five additional days of submerged-cap maceration preceded racking.
Ageing
The detailed production account describes 20 months in 700-litre tonneaux followed by 3 months in unlined concrete tanks before bottling. A summary on the same page instead specifies 24 months in three 700-litre tonneaux. For the 2018 vintage, the technical sheet records 30 months in three 7-hectolitre French-oak tonneaux and a further 6 months in bottle.
The name TreSette refers to the three 7-hectolitre tonneaux used for maturation.
Technical data
The 2018 vintage has 15.00% alcohol. It was bottled in February 2022, with 2,500 standard 0.75-litre bottles and 50 magnums of 1.5 litres produced. The technical sheet classifies it as Rosso Toscana I.G.T.; the wine page uses Merlot Toscana IGT.
The bottles are lightweight. Capsules and labels are recyclable and regenerable, while the shipping cartons are PEFC-certified and made from recycled and recyclable paper; biodegradable inks are used.
