Vineyard and terroir
The Chardonnay is hand-harvested from hillside vineyards in Valle dell’Adige, at elevations from 250 to 792 m. The sites are selected according to the weather conditions of each season. The soils contain balanced proportions of clay and limestone, contributing strength and minerality to the grapes.
Vinification
The wine is made by the traditional method. A portion is fermented in barriques, adding gentle oak notes and subtle aromatic depth while retaining freshness and balance. The liqueur d’expédition is prepared specifically for Flavio according to a recipe kept confidential by the winery.
Ageing
The wine ages for at least five years, including an extended period on the lees. Its curved bottle confines the settled yeast to a small area, slowing sensory development. This maturation refines the aromas and produces a fine stream of bubbles.
Tasting profile
The wine has lively, fine bubbles and a complex, elegant aroma, with notes of bread, golden apple and gentle oak. It is fresh and balanced, with subtle aromatic depth.

Label / history
The winery takes its name from Rotari, a Lombard king who ruled in the mid-7th century. He conducted military campaigns in Trentino, conquered almost all of Northern Italy and wrote the Lombard Kingdom’s first legal code in Latin.
