Vineyard and terroir
The vineyards are in the Brindisi area of Salento, at 100 metres above sea level.
Vinification
The grapes are harvested during the first ten days of September. Fermentation takes place in temperature-controlled stainless-steel tanks.
Ageing
The wine matures for three months in stainless-steel tanks, followed by three months in bottle before release.
