Vineyard and terroir
The Vermentino grows in Salento at 100 metres above sea level, on rich clay-limestone soils. The vineyards experience a Mediterranean climate and are close to the sea.
Vinification
The grapes are harvested at optimal ripeness and vinified under controlled temperature.
Ageing
The wine rests for three months in stainless-steel tanks, followed by two months in bottle before release.
