Vineyard and terroir

The grapes come from a 20 ha production area divided between San Fabiano, at 250 m, and Cellole, at 450 m. The vineyards face south-west, and the average yield is approximately 75 quintals per hectare (7.5 tonnes/ha).

Grapes

The latest published vintage, 2021, comprises 70% Sangiovese, with Cabernet Sauvignon and Merlot together accounting for the remaining 30%.

Vinification

Harvest runs from 15 September to 10 October according to vineyard location and grape variety. Grapes are selected both in the vineyard and in the cellar. Fermentation takes place at controlled temperature, with medium-to-long skin contact lasting 10–20 days depending on the variety, followed by gentle pressing.

Ageing

Approximately 70% of the wine matures in stainless-steel and concrete tanks. The remaining 30% is aged in tonneaux and barriques, spending approximately 4–12 months in wood.

Technical data

The 2021 wine has 14.10% alcohol by volume, total acidity of 5.50 g/L, residual sugar of 2.5 g/L and net extract of 29.5 g/L. Production is approximately 35,000 bottles, offered in a 0.750 L format. It is certified organic under control-body code IT BIO 006.

Tasting profile

Ruby red with light garnet nuances. The nose is fine and persistent, showing sour cherry with a gentle spicy accent. The palate has good structure and combines balance and harmony with freshness and pleasantly perceptible tannins.

Serving and pairing

Its freshness and supple character accommodate a broad range of dishes, from land-based antipasti and Mediterranean first courses to white meats and delicate red meats. It can also be served as an aperitif, enjoyed between meals or paired with light snacks. The wine is approachable on release while retaining the capacity for medium-term ageing.
