Vineyard and terroir

The 2022 release draws on a 25 ha production area across the San Fabiano and Cellole estates. The San Fabiano vineyards stand at 250 m, while Cellole reaches 450 m; the sites have southwest exposure. Average yield is approximately 65 quintals per hectare, equivalent to 6.5 t/ha.

Grapes

Blend proportions vary by vintage. The latest published vintage, 2022, is 90% Sangiovese and 10% complementary varieties.

Vinification

The 2022 harvest ran from 23 September to 17 October, with timing determined by vineyard location and grape variety. Grapes are carefully selected in the vineyard and again in the cellar. Alcoholic fermentation takes place at controlled temperature, followed by a medium-long skin maceration of 10–15 days and gentle pressing.

Fruit from the different vineyard origins is vinified and matured separately. The components are assembled only after maturation.

Ageing

The 2022 wine matures for approximately 12 months in second-use tonneaux, followed by at least six months in bottle.

Technical data

For the 2022 release: alcohol 13% vol, total acidity 7.2 g/L, net extract 30.4 g/L and residual sugar below 1 g/L. Production is 90,000 bottles. The listed bottle format is 0.750 L, with special formats available on request. The wine is certified organic under control code IT BIO 006.

Tasting profile

Intense ruby red with light garnet nuances. The fine, persistent bouquet combines violet, ripe fruit and spice. The palate has substantial structure and freshness, carrying a significant tannic presence that is both robust and velvety. The finish is long and balanced, bringing together warmth, supple tannins and well-judged acidity.

Serving and pairing

Serve at 16–18 °C. Pair with traditional Tuscan cooking, pasta-based first courses, soups, white or red meats, Tuscan antipasti, and fresh or medium-aged cheeses.

Vintage notes

The 2021 technical sheet records a harvest from mid-September to mid-October, skin maceration of 15–20 days, maturation for 12 months in 500 L second-use wooden vessels, and at least three months of bottle ageing. Its alcohol is 13.5% vol. For the newer 2022 release, the product page gives a harvest of 23 September–17 October, maceration of 10–15 days, approximately 12 months in second-use tonneaux, at least six months in bottle, and 13% alcohol.
