Vineyard and terroir
The Chardonnay is selected from mountain vineyards at 400–600 metres above sea level on the hills of Pressano and in the Cembra Valley. The soils are varied: porphyritic-volcanic formations, red marl around Pressano, sandy loam in the Cembra Valley and medium-textured soils elsewhere, all originating from morainic deposits.
Grapes
100% Chardonnay. Vintage 2020.
Vinification
The grapes are harvested by hand at full ripeness between late August and the first days of September. Primary fermentation takes place in stainless-steel tanks at controlled temperature. The base wine then spends eight months on its lees in stainless steel with frequent bâtonnage. The second fermentation occurs in bottle, with tirage in May of the year following harvest.
Ageing
The sparkling wine remains on selected lees for 36 months.
Technical data
Alcohol: 12.5% vol. Total acidity: 7 g/l. Residual sugar: 3.2 g/l. Available in 0.75-litre bottles and 3-litre Jeroboams.

Serve at 6–8 °C.
