Vineyard and terroir

Susumaniello from Salento, grown on coastal-origin soil that is particularly rocky, medium textured and inclined toward sand. The ground is moderately deep, porous and freely draining. Guyot-trained vines are planted at 4,500 per hectare. Mature vines underpin the wine's identity, although their precise age is not specified.

Grapes

100% Susumaniello.

Vinification

Harvest occurs in the first week of September. Grapes are picked by hand early in the morning, slightly before full maturity to protect acidity. Selection favours the highest bunches, furthest from the soil. The fruit is softly pressed under inert gas, and the first fraction of must is separated immediately. Fermentation follows off the skins at 14–16°C.

Ageing

At least three months in stainless steel.

Rosé wine; Salento IGP. The 2025 vintage has 13% alcohol by volume.

Tasting profile

Lively pale pink. The fresh, multifaceted bouquet brings together wildflowers, small red berries, blood orange and Mediterranean scrub, with light nuances of green tea and acacia honey. Fine and elegant on the palate, balancing gentle warmth with an acidic, savoury-mineral character.

Serving and pairing

Serve at 10–12°C. Its versatility suits lightly structured meat-based dishes as well as seafood and vegetarian cooking. It can also accompany an aperitif of mildly matured, moderately savoury cheeses and cured meats. The suggested drinking window is within three years of harvest.

Label / history

Amai recalls the bond between winegrowers and the old Susumaniello vines beside which they matured. The concept associates vine age with the variety's highest winemaking potential.
