Vineyard and terroir

The Primitivo comes from espalier-trained vineyards near San Marzano in the province of Taranto, Salento, Puglia, not far from the sea. The vineyards lie at approximately 100 m above sea level in an area of high heat accumulation and medium-low rainfall. The shallow, medium-textured soils are clayey and contain a good proportion of rocks. Planting density is 5,000 vines per hectare.

Grapes

100% Primitivo, in accordance with the denomination specification.

Vinification

Harvest takes place in mid-September. Temperature-controlled maceration and alcoholic fermentation with selected yeasts last approximately 10 days.

Ageing

The wine matures for 6 months in French and American oak barriques.

Technical data

The 2023 shop release has 14% alcohol by volume.

Tasting profile

Ruby red with violet reflections. The generous bouquet evokes ripe cherries and plums, complemented by cocoa and vanilla. The full-bodied palate combines a velvety texture and the warming character of Primitivo with mineral and balsamic impressions, elegant tannins, fragrant red fruit and a finish marked by persistent sweetness.

Serving and pairing

Serve at 16–18°C. Pair with savoury first courses, lamb, game in rich sauces and hard cheeses. Ideal consumption is within 7 years of harvest.

Label / history

Talò is a family name chosen as a collective tribute to the growers of San Marzano and their families, who tend each vineyard like a garden. The collection brings together different varieties and denominations as a symbol of the community.
