Vineyard and terroir
The fruit comes from selected hillside vineyards. The vines are espalier-trained in shallow, stony, medium-textured clay soils tending toward limestone. The Calce name refers to lime—a sun-warmed stone shaped through fire, art and ingenuity—while the rosé is presented through the image of a pink sunset over the sea and vineyards dried by the summer sun.
Grapes
Chardonnay and Negroamaro. The precise proportions are not specified.
Vinification
Harvest occurs in two periods, the first week of August and the second week of September. Whole grapes are gently pressed, with only the first free-run fraction retained. The must ferments at low temperature, followed by secondary fermentation in bottle.
Ageing
More than 36 months in bottle on selected yeasts.
Tasting profile
Pale rosé with delicate onion-skin highlights and a fine, persistent perlage. Fresh citrus and gentle floral notes lead into small red fruits and nuances of bread crust. The palate is dynamic and lively; subtle evolved notes bring elegance to a texture that is simultaneously firm and soft.
Serving and pairing
Serve at 6°C. Pair with light- to medium-structured fish-based first and second courses.
