Vineyard and terroir
Chardonnay comes from selected hillside vineyards particularly suited to the variety. The vines are espalier-trained in shallow, medium-textured clay soils with a substantial stony component. The name Calce evokes lime: a sunlit stone shaped by wind, fire, craft and ingenuity, as well as the sandy, shell-rich character associated with the wine.
Grapes
100% Chardonnay.
Vinification
Harvest takes place in the first week of August. Whole bunches are gently pressed, and only the first 55% of free-run juice is retained. The must then ferments at low temperature. The sparkling wine undergoes its second fermentation in bottle by the traditional method.
Ageing
The wine remains in bottle on selected yeasts for more than 36 months.
Tasting profile
Brilliant straw yellow with an exceptionally fine, persistent perlage. The intense, refined bouquet combines broom flowers, exotic fruit and fresh citrus with the distinctive fragrance of prolonged lees ageing. The palate is driven by a tangy, savoury line and the gentle prickle of the bubbles, balanced by a caressing softness.
Serving and pairing
Serve at 6°C. Pair with light appetisers, fish or shellfish first courses accompanied by citrus sauces, crudités with delicate sauces, vegetable dishes or fresh cheeses.
