Vineyard and terroir

Red varieties typical of Salento come from old alberello vines around San Marzano in the province of Taranto, at an average altitude of approximately 100 m. The bush vines carry four to six buds and yield about 1 kg of grapes per plant; planting density is 4,500 vines per hectare. The shallow soils are medium-textured and clayey, with a substantial stony component. Summers are moderately to very warm.

Grapes

A blend of red grape varieties typical of Salento.

Vinification

The grapes are harvested by hand into small baskets in September, then destemmed and crushed. Cold pre-fermentation maceration at 8°C precedes alcoholic fermentation at a controlled 24–26°C. The wine is drawn off using gentle presses.

Ageing

Malolactic fermentation takes place in stainless steel, followed by 12 months in French oak barriques.

Technical data

Non-vintage. Alcohol: 14.5% vol. Special formats include 1.5 L and 3 L.

Tasting profile

Ruby red with purple reflections. The intense, complex bouquet combines plum and fruit preserve with tertiary notes of vanilla and liquorice. The palate is powerful, structured and supple, ending in a long finish.

Serving and pairing

Serve at 18°C with substantial first courses, red meat or game. Best enjoyed within 10 years of harvest.

Label / history

Collezione Cinquanta was created in 2012, fifty years after Cantine San Marzano was founded. Conceived as a non-vintage anniversary wine, it brings together leading red grape varieties associated with Salento.
