Vineyard and terroir

The fruit comes from San Marzano in the province of Taranto, within Salento, Puglia. Vineyards lie at approximately 100 m above sea level and experience substantial day-to-night temperature variation. The shallow soil has a medium-fine texture. Vines are Guyot trained at 4,500 plants per hectare.

Grapes

Mainly Chardonnay complemented by indigenous white varieties from Puglia. The supporting native grapes and blend proportions vary from year to year.

Vinification

Harvest takes place in August. After destemming, the grapes undergo several hours of cryomaceration. The marc is softly pressed, followed by cold static settling. Alcoholic fermentation takes place in French oak barriques.

Ageing

Four months on the lees in French oak barriques, with weekly bâtonnage.

Technical data

White wine; Salento IGP. The 2024 vintage has 14% alcohol by volume. Published formats include 375 ml, 750 ml, 1.5 l and 3 l.

Tasting profile

Straw yellow tending towards golden reflections. Floral aromas are joined by peach and delicate vanilla. The palate is generous yet elegant, fresh, delicate, savoury and mineral, combining firm acidity with enveloping warmth.

Serving and pairing

Serve at 12–14°C with starters, fish-based first courses and cheese. The suggested drinking window is within 10 years of harvest.

Label / history

“Edda” means “she” in the Salento dialect. The name presents the wine as the feminine expression of San Marzano, while the blend is designed around finesse and longevity.
