Vineyard and terroir
The vineyards lie around San Marzano in Salento at approximately 120 m above sea level, an area marked by pronounced temperature shifts and very windy summers. The shallow soil has a medium texture tending toward clay and contains abundant stones. The vines are espalier-trained at a density of 4,000 plants per hectare.
Grapes
Native white grapes of Salento.
Vinification
Harvest takes place from August through September. The grapes are gently pressed, then undergo low-temperature alcoholic fermentation off the skins. A second fermentation takes place in autoclave.
Ageing
The wine remains in autoclave for approximately one month.
Technical data
Alcohol: 12% vol.
Tasting profile
Brilliant straw yellow with a fine mousse. Lively floral aromas mingle with fragrant yellow fruit. The palate is savoury, fresh and pleasantly delicate, with a gentle prickle.
Serving and pairing
Serve at 6–8°C. Suitable as an aperitif and with light starters, seafood or lightly structured vegetarian dishes. Best consumed within two years of harvest.
Label / history
The Pumo is a traditional decorative object that has adorned balconies and the handrails of old stairways in Puglia for centuries. Made from clay that once nourished the vines, it represents nature’s abundance and generosity; across this range, it appears in a spectrum of colours corresponding to different grapes and appellations.
