Vineyard and terroir
The production area surrounds San Marzano in the province of Taranto, Salento, Puglia, at approximately 100 m above sea level. It benefits from pronounced differences between daytime and nighttime temperatures. The soil is shallow and medium-to-fine in texture. The vines are Guyot-trained.
Grapes
100% Chardonnay.
Vinification
Harvest takes place during the first and second ten-day periods of August. The grapes are destemmed and gently pressed, after which the must undergoes cold static settling for natural clarification. Alcoholic fermentation proceeds in stainless-steel tanks at 16°C.
Ageing
Maturation takes place in stainless-steel tanks.
Technical data
Alcohol: 12.5% vol.
Tasting profile
Straw yellow. The enveloping floral bouquet first recalls jasmine and wild rose, then opens toward pineapple and banana, with a light herbaceous nuance. The palate is elegant, fresh, delicate and mineral.
Serving and pairing
Serve at 10–12°C with fish soups, shellfish broths, vegetables and soft cheeses. Best consumed within two years of harvest.
Label / history
The Pumo is a decorative object that has adorned balconies and the handrails of ancient stairways in Puglia for centuries. Formed from the same clay that once nourished the vines, it symbolizes nature’s abundance and generosity. Its spectrum of colours across the range represents different varieties and appellations.
