Vineyard and terroir

The grapes come from vineyards around San Marzano in the province of Taranto, Salento, Puglia, at approximately 100 m above sea level. The area experiences pronounced differences between daytime and nighttime temperatures. Soils are shallow and fine-textured. Espalier-trained vines are planted at 4,000 plants per hectare.

Vinification

Harvest takes place in the second and third weeks of August. After destemming and gentle pressing, the must undergoes cold static settling for natural clarification. Alcoholic fermentation proceeds in stainless-steel tanks at 16°C.

Ageing

Maturation takes place in stainless-steel tanks.

Technical data

Alcohol: 12.5% vol.

Tasting profile

Straw yellow with green reflections. Floral broom notes are joined by citrus and tropical fruit. The palate is fresh and mineral, supported by lively acidity.

Serving and pairing

Serve at 10–12°C with starters, fish soups, young soft cheeses or first courses dressed with light fish sauces. Best consumed within two years of harvest.

Label / history

The Pumo is a traditional decorative object seen for centuries on Puglian balconies and old stairway handrails. Made from the clay that formerly nourished the vines, it symbolizes the abundance and generosity of nature. The range interprets it in different colours for its various grapes and appellations.
