Vineyard and terroir
The production area surrounds San Marzano in the province of Taranto, Salento, Puglia, at approximately 100 m above sea level. It has high mean annual temperatures and low rainfall. The shallow, medium-textured clay soil contains abundant stones. Vines are trained to espalier/Guyot at a density of 4,500 plants per hectare.
Grapes
Native red grapes of Salento.
Vinification
The grapes are harvested in the final week of August to preserve acidity. Gentle pressing is followed by low-temperature alcoholic fermentation off the skins and refermentation in autoclave.
Ageing
The wine remains in autoclave for approximately one month.
Technical data
Alcohol: 12% vol.
Tasting profile
Bright pale pink with a fine, velvety perlage. The delicate bouquet combines strawberries, crisp cherries and raspberries with citrus notes. Fresh and mineral on the palate, it has lively acidity and excellent balance.
Serving and pairing
Serve at 6–8°C with light starters, seafood and vegetarian dishes. Best consumed within two years of harvest.
Label / history
The Pumo is a traditional decorative object that has adorned balconies and the handrails of old stairways in Puglia for centuries. Fashioned from the clay that once nourished the vines, it symbolizes nature’s abundance and generosity. Its varying colours across the range evoke different grape varieties and appellations.
