Vineyard and terroir

Negroamaro comes from espalier-trained vineyards around San Marzano in the province of Taranto, approximately 100 m above sea level. The area experiences a marked difference between daytime and nighttime temperatures. The shallow soil has a medium clay texture and a substantial rocky component. Planting density is 5,000 vines per hectare.

Vinification

Harvest takes place during the second ten-day period of September. Part of the fruit is gently cold-pressed; the remainder undergoes saignée 12 hours after maceration begins. The resulting musts are combined and fermented in stainless steel at 14°C with selected yeasts.

Ageing

Maturation takes place in stainless-steel tanks.

Technical data

The 2025 wine offered through the online shop has 12% alcohol by volume. The standard bottle is 750 ml.

Tasting profile

Crystalline cherry-pink in colour, with an intense aroma of cherry, rose and pomegranate. The palate has good body while remaining fresh and balanced.

Serving and pairing

Serve at 10–12°C with Italian-style starters, fish soups, fish baked in foil or roasted, and young or lightly matured cheeses. Best enjoyed within two years of the harvest.

Label / history

The pumo is a traditional decorative object that has adorned balconies and the handrails of old stairways in Puglia for centuries. Made from the clay that once nourished the vines, it symbolizes the abundance and generosity of nature. The Il Pumo range interprets that symbol through different colours, grape varieties and appellations.
