Vineyard and terroir
The grapes come from San Marzano in Salento, Puglia, at approximately 100 m above sea level. The area has high average temperatures and medium-low rainfall. Thin, rocky clay soils support espalier-trained vines planted at 4,500 plants per hectare.

Vinification
The grapes are harvested by hand early in the morning during the last week of August to retain acidity. Gentle pressing yields the first 55% free-run must, which ferments at low temperature. Secondary fermentation takes place in autoclave by the Charmat method.
Ageing
The wine remains in autoclave on its own yeasts for approximately one month, followed by ageing in bottle.
Tasting profile
Pale, bright pink with onion-skin nuances and a fine, persistent perlage. Orange blossom, pink grapefruit and pomegranate shape an elegant bouquet. The palate is fairly full and intense, with pronounced freshness and savoury minerality, a dry finish and a Mediterranean-maquis aftertaste.
Serving and pairing
Serve at 6°C. Suitable as an aperitif, with light starters and with moderately structured first and second fish courses.
Label / history
“Liboll” reflects the Puglian way of referring to bubbles. The Rosé is a fresh Charmat-method sparkling wine with a dry finish, made for informal aperitifs and sparkling-wine occasions.
