Vineyard and terroir
The grapes come from San Marzano in Salento, at approximately 100 m above sea level. The area has high average temperatures, very low rainfall and marked day-to-night temperature variation. The mixed soils tend toward calcareous. Vines are Guyot-trained at 4,000 plants per hectare.

Vinification
The grapes are harvested by hand early in the morning during the first ten days of August. Picking is slightly advanced to retain acidity. Whole bunches are gently pressed, and only the first 55% of free-run must is retained. This fraction ferments at low temperature before secondary fermentation in autoclave by the Charmat method.
Ageing
After the prise de mousse, the wine remains in autoclave on its own yeasts for approximately one month, followed by time in bottle at controlled temperature.
Tasting profile
Bright straw yellow with greenish reflections and a fine, persistent perlage. The clean, fragrant nose combines fresh citrus and yellow-fleshed fruit with delicate white flowers and aromatic herbs. Dry, fresh and lively on the palate, with good balance, energetic acidity and a vivid personality.
Serving and pairing
Serve at 6°C. Pair with seafood starters and fresh white-fish dishes. The lively acidity also suits lightly fried or crisp preparations, seasonal vegetables and delicately creamy fresh cheeses.
Label / history
“Liboll” reflects the Puglian way of referring to bubbles. The Brut was conceived as a fresh, lively and relatively dry Charmat-method sparkling wine for informal aperitifs and other occasions calling for sparkling wine.
