Vineyard and terroir
Susumaniello grown in Salento on dark, coastal-origin soil. The shallow, permeable and freely draining ground has a medium-textured sandy-loam composition and a substantial rocky component. Vines are Guyot trained at a density of 4,500 plants per hectare.
Grapes
100% Susumaniello. The variety is productive when young but becomes increasingly sparing as the vines age. Its declining yields led to its neglect in the past, before its revival for varietal wines.
Vinification
Harvest takes place during the second and third ten days of September. Temperature-controlled maceration and alcoholic fermentation with selected yeasts last about 10 days.
Ageing
Six months in French and American oak barriques.
Technical data
Red wine; Salento IGP. The 2021 wine offered through the winery shop has 13.5% alcohol by volume.
Tasting profile
Bright red with violet reflections. Red and black fruit, violets and light Mediterranean nuances shape the bouquet. The palate is elegant and restrained, with fine, well-integrated tannins, fresh acidity and a clean, fruity finish. The structure favours finesse over power.
Serving and pairing
Serve at 16–18°C. Pair with roast white meats and Mediterranean pasta dishes of moderate weight. Its lively acidity also suits flavourful fish, vegetarian cooking and semi-mature cheeses. The suggested drinking window is within 10 years of harvest.
Label / history
“Susco” means “shy” in the local dialect, evoking the reserved temperament attributed to Susumaniello.
