Vineyard and terroir
The Chardonnay comes from San Marzano in Taranto, Salento, Puglia, at approximately 100 metres above sea level. The dry microclimate is moderated by soils with good water retention. Guyot-trained vines are planted at 4,000 plants per hectare on shallow, medium-textured soil.
Grapes
100% Chardonnay.
Vinification
Harvest takes place in the second week of August. The grapes are destemmed and held with their skins for several hours at low temperature before pressing, encouraging gentle aromatic extraction. Fermentation lasts 13–15 days in stainless-steel tanks at 15°C to retain the varietal profile.
Ageing
The wine matures for four months in French oak barrels with periodic bâtonnage.
Technical data
The 2025 shop release has 12.5% alcohol by volume.
Tasting profile
Straw yellow in colour. White flowers and tropical fruit shape the elegant bouquet, complemented by vanilla from barrel maturation. The palate is smooth, elegant, fresh and mineral.
Serving and pairing
Serve at 10–12°C with fish-based first courses, starters or cheeses. Best enjoyed within three years of harvest.
Label / history
Talò, a surname common among local growers, collectively honours the San Marzano farming families who tend their vineyards like gardens. The range brings together several varietal wines as an emblem of the community.
