Vineyard and terroir
The grapes are grown around San Marzano in Salento, Puglia, at approximately 100 m above sea level. The area has high heat accumulation and medium-to-low rainfall. Its shallow, medium-textured clay soils contain abundant stones. The espalier-trained vineyards are planted at 4,500 vines per hectare.

100% Negroamaro.
Vinification
Harvest takes place in mid-September. Temperature-controlled maceration and alcoholic fermentation with selected yeasts continue for approximately 10 days.
Ageing
The wine matures in French oak barriques for 4–6 months.
Tasting profile
Deep purple-red with violet reflections. The intense, persistent bouquet combines blackcurrant and wild berries with spice, balsamic nuances and vanilla. Full-bodied, soft and harmonious, it has an engaging tannic structure and a long, savoury finish.
Serving and pairing
Serve at 16–18°C with savoury first courses, meat or cheese.
Label / history
Talò is a surname used to thank the growers of San Marzano collectively, together with the families who tend each vineyard like a garden. The range gathers different varietal wines as a symbol of the community.
