Vineyard and terroir

The grapes come from espalier-trained vineyards in Alta Murgia, Puglia, at approximately 180 m above sea level. The area experiences high temperatures and medium-low rainfall. Its deep, medium-textured soils are rich in clay and contain a substantial rocky component.

100% Nero di Troia, also known as Uva di Troia.

Vinification

Harvest takes place in mid-October. Temperature-controlled maceration and alcoholic fermentation with selected yeasts last approximately 10 days.

Ageing

The wine matures for 6 months in French and American oak barriques.

Technical data

The 2024 shop release has 13.5% alcohol by volume.

Tasting profile

A vivid, intense ruby-red wine. The bouquet combines violet, cherry and blackberry with coriander, black pepper and liquorice. Light toast contributes tobacco and cocoa nuances. The palate is structured and balanced, with firm yet elegant tannins, freshness from a distinct acid line and good potential for development.

Serving and pairing

Serve at 16–18°C. Pair with lasagna, pasta with meat ragù, handmade pasta in rich sauces, red meat, stewed or braised veal, grilled meat and medium-aged cheeses. Ideal consumption is within 7 years of harvest.

Label / history

Talò is a family name chosen as a collective tribute to the growers of San Marzano and their families, who tend each vineyard like a garden. The line brings together different varietal wines as an expression of the community.
