Vineyard and terroir

The grapes come from northern Salento at approximately 100 m above sea level. The vineyards are planted on shallow, medium-textured clay soils with a substantial stony component. Vines are espalier-trained at a density of 4,500 vines per hectare.

85% Negroamaro and 15% Malvasia Nera di Brindisi—the traditional Salento partnership of Negroamaro with Malvasia Nera.

Vinification

Harvest takes place in the second half of September. Temperature-controlled maceration and alcoholic fermentation with selected yeasts last approximately 10 days.

Ageing

The wine matures in French oak barriques for 4–6 months.

Tasting profile

Bright ruby red with garnet nuances. The intense bouquet offers cherry and plum, spice and Mediterranean herbs. The palate is robust and full-bodied, with a pleasantly fresh finish and an approachable, ready-to-drink character. Its aromatic elegance is matched by firm structure and lingering persistence.

Serving and pairing

Serve at 16–18°C. Pair with salami and other cured meats, savoury first courses, red meat and cheese.
