Vineyard and terroir
The Susumaniello comes from vineyards in northern Salento, between Francavilla and San Marzano, at approximately 100 m above sea level. The fine red soil has a calcareous matrix and occasional rocky outcrops; its characteristic colour comes from abundant iron oxides. Vines are Guyot-trained at a density of 4,500 vines per hectare.
Grapes
100% Susumaniello, a formerly rare Salento variety revived for its natural elegance and strong regional identity.
Vinification
The grapes are harvested during the second and third ten-day periods of September. Temperature-controlled maceration and alcoholic fermentation with selected yeasts last approximately 10 days.
Ageing
The wine spends six months in French and American oak barriques. Its defined tannic framework supports maturation in wood.
Tasting profile
Deep, vivid red. The floral and fruit-driven bouquet is enriched by spice and light balsamic nuances, with crisp red fruit and small black berries also shaping its aromatic profile. The palate is structured yet elegant, with defined tannins, lively acidity and balanced persistence.
Serving and pairing
Serve at 16–18°C. Pair with light braises, roast veal and gently slow-cooked meat dishes. Its tannins suit Mediterranean ragù, lasagne and baked pasta, while its aromatic persistence complements moderately matured cheeses and rustic Puglian cooking.
Label / history
Talò is a surname chosen as a collective tribute to the growers of San Marzano and their families. The range brings together different varietal wines as a symbol of the local winegrowing community.
