Vineyard and terroir
The Verdeca is grown in the hills of northern Taranto province in Salento, Puglia, at approximately 100 metres above sea level. The area experiences pronounced day-to-night temperature variation. Espalier-trained vines are planted at 4,000 plants per hectare on shallow, fine-textured soil.
Grapes
100% Verdeca, an indigenous green-skinned variety associated with Puglia's white wines for at least four centuries.
Vinification
Harvest occurs in mid-September. A cold pre-fermentation maceration lasting 6–8 hours precedes alcoholic fermentation, which is completed in French oak barrels.
Ageing
The wine matures for three months in French oak barrels with periodic bâtonnage. This treatment softens the variety's pronounced natural acidity.
Technical data
The 2025 shop release has 12.5% alcohol by volume.
Tasting profile
Straw yellow with golden reflections. The nose combines intense white-flower aromas with vanilla. Fresh and mineral on the palate, it closes with a persistent, pleasantly savoury finish.
Serving and pairing
Serve at 10–12°C with seafood, shellfish and fish dishes accompanied by light sauces. Best enjoyed within three years of harvest.
Label / history
Talò, a surname common among local growers, collectively honours the San Marzano farming families who tend their vineyards like gardens. The range brings together several varietal wines as an emblem of the community.
