Vineyard and terroir

The Vermentino comes from Guyot-trained vineyards near Brindisi in Salento, Puglia, at approximately 100 m above sea level. Proximity to the sea creates a temperate microclimate. The soil is shallow, medium-textured and predominantly sandy. Planting density is 5,000 vines per hectare.

Grapes

100% Vermentino.

Vinification

Harvest takes place during the final week of August. After destemming, the grapes remain in contact with their skins for a few hours at low temperature before pressing to enhance aromatic expression. Fermentation proceeds in stainless-steel tanks for 13–15 days at 15°C to preserve the varietal profile.

Ageing

The wine remains in stainless-steel tanks for 5 months.

Technical data

The 2025 release has 12.5% alcohol by volume.

Tasting profile

Straw yellow. Delicate white-flower aromas merge with citrus and Mediterranean maquis. Thyme and rosemary emerge on the palate, accompanying elegance, freshness, a saline-mineral character and a persistent finish.

Serving and pairing

Serve at 10–12°C with fish first courses, seafood starters or cheeses. Ideal consumption is within 2 years of harvest.

Label / history

The name Timo—Italian for thyme—evokes the Mediterranean scrub growing on the sandy dunes of Puglia’s coast and the herbal character found in the wine.
