Vinification
The grapes are manually and selectively harvested, then crushed and destemmed. Fermentation takes place in stainless-steel tanks at a controlled temperature. Skin maceration includes daily pumping over of the must onto the cap.
Ageing
The wine is refined in oak barrels; neither the vessel size nor the maturation period is specified.
Tasting profile
Vanilla nuances frame clearly expressed varietal fruit. The palate is full-bodied, elegant and persistent.
Serving and pairing
Pair with mushroom risotto, game, grilled or roasted meats, and mature cheeses. The stated cellar life is 7 years.
Label / history
The name Brumo alludes to the misty appearance created by the bloom, or pruina, on Nebbiolo berries and to the foggy season between October and November when the variety ripens.
