100% Nebbiolo.
Vinification
The grapes undergo a selective manual harvest, cold maceration and gentle pressing, followed by fermentation at controlled temperature.
Ageing
Made by the traditional method. The wine matures on its lees in bottle for 24 months before disgorgement and dosage.
Tasting profile
A lively rosé with a fine, persistent perlage. Delicate cherry aromas are framed by rose and violet, giving the wine an elegant, restrained aromatic character.
Serving and pairing
Suitable as an aperitif and particularly with shellfish and other fish-based dishes. It can also accompany an entire meal. Cellar life is 2–3 years.
Label / history
Initially conceived as an experiment, Neboise was developed as a distinctive sparkling expression of Nebbiolo rather than a still rosé.
