Vineyard and terroir
The fruit comes from four different vineyards.
Vinification
Harvest timing varies by vintage. The grapes are brought to the winery and destemmed, then fermented in stainless-steel tanks. For the 2009 vintage, harvesting took place from 9 to 19 October.
Ageing
The wine ages for about two years in oak barrels, of which 20–25% are new. After bottling, it rests for a further 18–20 months in the winery’s cellars before release.
Tasting profile
The aroma and flavour profile is fairly complex.
