Questo vino
Vineyard and terroir
The grapes are grown in the commune of Colognola ai Colli, northeast of Verona.
Grapes
Garganega with a small proportion of Chardonnay.
Vinification
The grapes are harvested by hand at optimal ripeness. They are gently pressed in a nitrogen environment to protect them from oxidation, then cold-macerated for 2 hours to extract aromas. Fermentation takes place in stainless steel tanks with selected yeasts at a controlled low temperature, which preserves the fresh character of the grapes.
Ageing
The wine rests on fine lees with bâtonnage until May of the following year, to develop balance and a silky texture. It is cold-stabilized before bottling to give a clear, bright colour.
Tasting profile
Elegant, with a floral and fruity nose: delicate white flowers together with ripe peach, pear and fresh citrus. The palate is light and harmonious, with lively acidity and gentle sweetness. The taste is fresh and balanced, with a subtle mineral note and a refreshing finish.
Serving and pairing
Suited to seafood and fish, and as an aperitif.
