Vineyard and terroir
The grapes are grown on the slopes of Monte Garbi at approximately 300 m above sea level. The soils consist mainly of sand and clay, with numerous layers of white limestone. The vines are 40 years old.
Vinification
The grapes are harvested by hand in several passes from late September to early October. They are then placed in special crates and dried for three months in well-ventilated rooms, concentrating their sugar and potential alcohol. The dried grapes undergo a single pressing. Fermentation lasts 30 days in open French oak barrels, followed by malolactic fermentation in 500 L barrels.
Ageing
The wine matures in French oak barrels for three years, with bâtonnage performed monthly during the first year. It then rests in bottle for a further year. Drinking is recommended from five years after the harvest.
