Vineyard and terroir
The Corvina is grown on hills in the communes of Colognola ai Colli and Mezzane di Sotto, at 200–300 metres above sea level. The hilly landscape and moderate climate help the grapes keep a balance between freshness and ripeness, giving bright fruit with a gentle structure.
Vinification
After harvest the grapes are gently pressed in a pneumatic press. The must spends one day in brief skin contact at 7–8 °C to enhance aroma and colour. Fermentation takes place in stainless steel tanks at a controlled 22–23 °C. The lees are stirred once a week until malolactic fermentation is complete, which helps give a softer, rounder texture.
Ageing
The wine ages in stainless steel tanks for around 8 months, keeping its freshness and clean flavours while gaining balance and structure.
Tasting profile
A lighter, easygoing expression of Corvina, not overly full-bodied, with the emphasis on freshness and a soft texture. The palate offers cherry, red berries, subtle spice and delicate tannins, light and balanced rather than heavy.
Serving and pairing
Pairs with pasta, pizza, roasted meat and medium-aged cheeses.
Label / history
"Scaia" is a range of young, distinctive wines from Tenuta Sant'Antonio, offering a newer, more innovative approach to winemaking. The name pays tribute to the land where the wines are made: in the Venetian dialect, "scaia" means "flakes of stone, chalk, limestone".
