Vineyard and terroir

The grapes are grown in the commune of Colognola ai Colli, northeast of Verona, on the slopes of the Illasi and Mezzane valleys at around 100 m above sea level. The soils are limestone, which gives the wine a clean, fresh character. The mild climate, the influence of Lake Garda and the shelter of the Alps from cold winds give stable ripening conditions and allow expressive aromas to develop.

Vinification

After harvest the grapes spend a short time on their skins at low temperature to bring out more aroma. They are then pressed gently in a pneumatic press at 8–9 °C in an inert environment, without contact with oxygen. Fermentation takes place at 13–14 °C.

Ageing

The wine rests on its fine lees in stainless steel tanks, with bâtonnage at least once a week until bottling, which gives a softer, rounder texture. Cold stabilization before bottling keeps the wine clear and stable.

Tasting profile

Light, appealing and semi-dry, with juicy fruit and a smooth texture. Flavours of ripe apple, pear and citrus come with delicate floral notes. A gentle sweetness is balanced by refreshing acidity.

Serving and pairing

Suited to light appetizers, salads, fish, seafood and soft cheeses.

Label / history

"Scaia" is the name of a range from Tenuta Sant'Antonio of young wines with a fresh, more innovative approach to winemaking. The name pays tribute to the land where the wines are made: in the Venetian dialect, "scaia" means "flakes of stone, chalk, limestone."
