Vineyard and terroir
The vineyards lie at about 100 m above sea level in the Illasi Valley, Veneto. The fruit grows in soils of differing composition, contributing layers of flavour and aroma. Garganega and Trebbiano Soave grow in volcanic soils, while Chardonnay is planted in limestone soils.
Vinification
Because the grapes ripen at very high temperatures, techniques associated with hot-climate wine regions are used to preserve their aromas and flavours. The grapes are pressed at 8–9 °C in a pneumatic press without exposure to oxygen, followed by 10–12 hours of cryomaceration. Fermentation takes place at 14–15 °C.
Ageing
The wine rests in stainless-steel tanks.
Tasting profile
Crystal-clear, with a soft, fresh and fruity aroma. Its aromas and flavours are intense and persistent, leading to a pleasant finish with a slight bitterness.
Label / history
The name “Scaia” refers to the white volcanic layers found in the limestone soils of the Illasi Valley. The bottle uses a glass stopper designed to protect the wine from external influences and prevent cork taint.
