Vineyard and terroir
The grapes come from the Mazzane di Sotto vineyard near Monte Garbi. The soils are predominantly limestone, with occasional clay layers, and the vines average around 25 years of age.
Vinification
The grapes are harvested by hand. Before pressing, the Cabernet Sauvignon is naturally dried for one month in small, open wooden crates, dehydrating the grapes and concentrating their sugars. Fermentation takes place in stainless-steel tanks.
Ageing
The Corvina and Rondinella mature in stainless-steel tanks, while the Cabernet Sauvignon spends six months in French oak barrels. The components are then blended and bottled.
Tasting profile
The partially dried Cabernet Sauvignon contributes complexity, aromatic intensity and concentrated fruit notes.
Label / history
“Sponsa” means “rested” in the local dialect.
