The grapes are selected from the sunniest, most open sites.
Vinification
After harvest, the grapes are dried for 120 days, losing 30% of their water. This concentrates the sugars and flavours in the resulting juice.
Ageing
The wine matures slowly in oak barrels in centuries-old vaulted cellars.
