Vineyard and terroir
The grapes grow in a 2.4-hectare vineyard in the commune of Negrar, at 350–450 metres above sea level. The site faces south and southeast. Its elevation and ventilation provide good air circulation and low humidity. Yields are deliberately kept low. No pesticides, herbicides or chemical fertilisers are used.
Vinification
The grapes usually ripen by the first week of October. After harvest, they are placed in a single layer in open crates at the highest point of the vineyard and dried for up to 160 days. Alcoholic fermentation takes place in steel tanks.
Ageing
The wine ages for 24 months in large oak barrels.
Tasting profile
Intensely fruity, with chocolate and coffee notes developed during ageing. Gentle cherry acidity balances the sweetness and brings an elegant freshness.
