Vineyard and terroir
The fruit comes from two separate plots in the Colli Berici: Alonte on the western side of the hills and Arcugnano on the eastern side. The vineyards lie between 120 and 180 m, with a south-eastern exposure at Alonte and a north-western exposure at Arcugnano. The soils are calcareous and karstic in origin, with abundant stones and a high iron content.
The vines are trained to spur-pruned cordon at a density of 4,000 vines per hectare. Their average age is around 50 years, with some vines exceeding 50 years.
Grapes
Cabernet Sauvignon, Cabernet Franc and Merlot. The combination of the sunny hillside sites and mature vines shapes the wine's Bordeaux-inspired character.
Vinification
The grapes are harvested in early October, slightly later than usual, at full phenolic ripeness. Whole clusters are vinified in wooden vats with an average capacity of 25 hl. Fermentation temperature does not exceed 26°C.
Ageing
The wine matures for 18 months in tonneaux, 25% of which are new.
Technical data
Alcohol: 14% vol. Contains sulphites. Available formats are 375 ml, 750 ml and 1,500 ml Magnum.
Tasting profile
Dark purple-red in colour. The intense, vivid fruit aroma recalls blueberry and raspberry preserves, followed by sweetly spiced nuances of plum, hazelnut and cocoa. Full-bodied and rich on the palate, with sweet tannins, a fruity character and a very long, savoury finish.
Serving and pairing
Pair with meat-filled pasta, risotto with meat or grilled red meat. The wine retains its sensory character for at least eight years and may continue to mature for considerably longer, developing tertiary aromas. Bottles should be stored horizontally in a cool, dark place.
