Vineyard and terroir
The fruit comes from selected hillside vineyards between the Grezzana and Illasi valleys, with a smaller component from San Pietro in Cariano. The sites lie at 150–300 m, predominantly facing south-west, while a smaller portion faces south-east. The soils are marly and calcareous, with abundant coarse mineral material. Vines are trained using Pergoletta Veronese and Guyot-trained vertical systems.
Grapes
Corvina, Rondinella and Corvinone.
Vinification
For the 2018 vintage, a rigorous selection took place in mid-September, several days before the normal harvest. Only 25–30% of the bunches were selected and picked by hand into trays. They remained for more than three months in dry, well-ventilated rooms, where natural dehydration and overripening concentrated sugars, polyphenols and aromatic compounds.
Crushing began in the third week of December. A one-week cold maceration preceded a four-week fermentation conducted at no more than 20°C.
Ageing
The 2018 matured for 30 months in French oak, divided between casks with an average capacity of 25 hl and French-oak tonneaux. It then rested in bottle for six months before release.
Technical data
2018 vintage: 16% alcohol by volume. Contains sulfites.
Tasting profile
Deep red in colour. The rich, fragrant bouquet is led by cherry preserve and blueberry, followed by plum, dried fruit and cocoa. Full-bodied and rounded on the palate, with velvety tannins, pleasant freshness and a long finish. Red-fruit flavours are complemented by a savoury impression. The wine is characterized by concentrated berry fruit and a generous, supple profile.
Serving and pairing
Pair with flavourful first courses, risotto, filled pasta, game and red-meat dishes. It can be kept for 10 years when bottles are stored horizontally in a cool, dark place.
