Vineyard and terroir
The vineyards are located predominantly in the Illasi valley at elevations between 150 and 300 metres. The soils are alluvial marl and limestone with abundant coarse mineral material. Vines are Guyot-trained, and production per hectare is strictly limited.
Grapes
Corvina, Corvinone and Rondinella. Ventale is conceived as a spontaneous expression of Corvina, combining fragrant fruit with savoury character.
Vinification
The bunches are harvested by hand into crates during the second week of October and transferred immediately to the winery. Fermentation takes place in truncated-conical oak vats at 22–24 °C for at least one month. Pump-overs follow no fixed schedule, and every vat is managed separately by hand.
Ageing
The wine matures for 18 months in 500-litre casks made from oak, chestnut and cherry wood, followed by another six months in bottle before release.

Alcohol: 14% vol. Contains sulphites.
Tasting profile
Intense red with violet highlights. The fragrant nose opens with ripe cherry, blackberry, sweet spices and green pepper, followed by cocoa and shortcrust-pastry nuances. The palate is vibrant and juicy, supported by velvety tannins, with a long, savoury aftertaste.
Serving and pairing
Pair with red meat, game or mature cheeses. The wine can be kept for six years when bottles are stored horizontally in a cool, dark place.

Label / history
The name Ventale draws on the well-ventilated Illasi valley, home to Cantina Santi. The wine celebrates Valpolicella and a return to the estate’s roots.
