Vineyard and terroir
Nebbiolo is sourced from 3.7 ha of vineyards distributed across Monforte, Serralunga d’Alba and Sinio, at 300–400 m above sea level. The limestone soils vary substantially from one zone to another. The vines are traditionally Guyot-trained at a density of 4,000 plants per hectare and average 10–15 years of age, depending on the vineyard.
Grapes
100% Nebbiolo.
Vinification
The grapes are picked by hand between the second half of September and the beginning of October. Fermentation and maceration take place in 3,000–5,000 L concrete vats for 15 days at 25–27°C. Twice-daily pump-overs aerate the fermenting must and break the cap.
Ageing
After frequent rackings in steel tanks, the wine is transferred to Slavonian oak barrels for several months. It then matures in bottle in cool, dark cellars before release.
Tasting profile
A fragrant red wine with aromas of roses and sour cherries, complemented by spicy and balsamic notes.
