Vineyard and terroir

The fruit comes from the St. Daniel vineyard near Bolzano, at 350 metres above sea level. The vines average around 15 years of age and are planted at a density of at least 6,000 plants per hectare in volcanic soils. A cool climate and marked differences between daytime and nighttime temperatures promote slow, even ripening.

Vinification

The grapes are carefully sorted and cold-macerated before fermenting for 14 days at 25 °C. Malolactic fermentation takes place in wood.

Ageing

Up to 70% of the wine undergoes malolactic fermentation and ages for 12 months in 35-hectolitre wooden barrels; around 30% follows the same process in oak barriques. After bottling, the wine rests for at least another year in the winery’s cellars before release.

Label / history

Praedium is a range of white and red wines intended to reflect historic places in Trentino-Alto Adige rather than individual grape varieties. Colterenzio labels carry the silhouette of a fifteenth-century castle built by Archduke Sigismund, who supported the development of vineyards in the area. The castle is now almost entirely in ruins.
