Grapes

The 2021 blend comprises 50% Cabernet Sauvignon, 30% Merlot and Syrah combined, and 20% Sangiovese. Separate percentages for Merlot and Syrah are not specified.

Vinification

Harvesting is manual, with an initial selection of bunches in the vineyard. The fruit is destemmed and the berries are selected again on a sorting table. Alcoholic fermentation lasts approximately seven days in temperature-controlled stainless-steel tanks at 26–28°C. The wine then remains on its skins for a further 10–15 days. Racking is followed by malolactic fermentation.

Ageing

The wine matures for 13 months in French barriques and tonneaux before release.

Technical data

The 2021 vintage has 14.5% alcohol, total acidity of 5.10 g/L, pH 3.54 and net dry extract of 31.8 g/L. Production totals 15,000 bottles.

Tasting profile

Deep, dark red in color, the wine has a generous, clearly defined aromatic expression centered on ripe red fruit. The palate is soft, rounded and enveloping, yet full-bodied and substantial, balancing structure and richness with elegance.

Vintage notes

A rainy winter built useful water reserves in the soil. Mild spring conditions supported regular budbreak, while persistent cool breezes helped avert frost. Several rainless weeks followed in June, but rainfall at the end of August enabled the grapes to reach full maturity. Harvest began in the final ten days of September and concluded during the first week of October.
